Oosirikaya Pulihara or Alma rice or Neelika Pulihogare

Ingredients:
Rice 1 ½ cups or Cooked rice 3 cups
Alma 11 to 12 medium sized
Green Chillies 4 (chop them length wise)
Ginger 1 inch piece (chopped finely)
Chana Dal(Senaga pappu) 2 teaspoons
Urad Dal(Mena pappu ) 2 teaspoons
Mustard seeds 1 teaspoon
Curry leaves 8-10
Turmeric ¼  teaspoon
Hing 2 pinches
Cashews 1 teaspoon (optional)
Oil 6 teaspoons
Salt as needed

Preparation:
1. Take 1 ½ cups of rice and cook it by adding 3 cups of water. Spread the cooked rice a big bowl.
 2.  Heat water in a vessel, after the water starts to boil, add 10 to 12 amla. Deseed the alma and smash them.

 3. Heat a pan and add oil after oil is heated turn to medium low flame  add chana dal, urad dal, mustard seeds, cashew, turmeric, hing ,curry leaves, green chillies and ginger fry till the urad dal becomes into golden color .
 5. Add tumeric powder and salt , mix well. Add smashed alma and mix well.  Cook for  about 3 to 5 minutes in medium low flame.
 6. Add cooked rice in the pan and mix well. 

Pulihara - Variety 2 or Puliyogare (with sesame powder)

This variety is usually made in Tamil nadu. The use sesame powder gives a very nice taste. In some temples also they make puliyougare with sesame oil and sesame powder.


Ingredients:
Rice 2 cups or Cooked rice 4 cups
Tamarind paste 1 cup (thick)
Green Chillies 6
Ginger 2 inch piece
Chana Dal(Senaga pappu) 2 teaspoons
Urad Dal(Menapa pappu ) 2 teaspoons
Red chillies 10 to 15
Mustard seeds 2 teaspoons
Curry leaves 2 strings
Corinader powder 2 teaspoons
Nuvvulu or sesame powder 2 tablespoons
Cashews Handful
Turmeric ½ teaspoon
Hing 2 pinches
Oil 1 cup
Salt as needed


Pre Preparation:
1. Take 2 cup of rice and cook it by adding 4 cups of water.
2. Soak tamarind in hot water and make a paste of it.
3. Dry roast sesame seeds for about 5 mniutes and make a powder of it
4. Cut green chilli into length wise. Cut ginger into very small pieces.

Preparation:
Heat a pan and add oil after oil is heated turn to medium low flame add chana dal, urad dal, mustard seeds, cashews, red chillies,  hing, curry leaves, green chillies and ginger fry till the urad dal becomes into golden color. Mix well. Add the sesame powder and salt to it and mix well.
Add tumeric powder and coriander powder to it and mix well. Now add the tamarind juice. Mix well and let it cook for 5 minutes in low flame.
Spread the cooked rice a big bowl. Let the rice cool for a while or else the rice will split while mixing the above tadka. Add the tadka to the rice and mix well.

Pudina Rice or Mint rice Variety-1

Indredients:
Pudina leaves or Mint leaves 2 bunches
Basmati Rice 1 cup
Water 1 ½ to 2 cups
(Depending on the rice)
Onion 1 medium sized
Cumin or Jeera 1 teaspoon
Garlic pods 4
Ginger 2 inch piece
Green chili 4
Garam masala ¾ teaspoon
Oil 2 table spoons
Salt as needed

Preparation:
1. Wash and soak basmati rice in water for about ½ an hour. Wash the mint leaves or pudina leaves. Cut the onion, garlic and ginger into pieces.
2. Heat skillet or deep vessel or pressure cooker. Add oil after oil is hot add jeera start to splutter, add onion pieces and saute well.
3. When the onion becomes translucent add ginger, garlic, green chili and pudina leaves. When the mint becomes soft switch off the stove.
4. Grind this into a coarse paste.
5. Add the paste to the soaked rice and mix well. Add garam masala powder, salt and mix well.

6. Close the cooker and keep whistle. After 3 whistles switch off the stove. Wait for 15 minutes. Serve hot with raita.

Plain Rice

There are two types of raw rice. Old rice which is stored for more than 6 months and new rice . New rice requires less water. Old rice requires more water. There are different varieties of rice long grain , basamathi, sona massuri .... New rice 1 and 1/2 cup water is ok. Old rice needs more water 2 cups sometimes 3 cups also.Old rice is good for health. New rice causes indigestion problem.

Ingredients:
Rice grains 1 cup
Water 2 cups

Preparation:
1. Wash the rice grains 3 times in water and put it in  a cooker or you can cook directly or in a pressure cooker bowl.
2. Add 2 cups of water and cook it until it is fully cooked. If you are cooking in cooker place the whistle while before cooking the rice on the lid. After 3 whistle turn to low flame and cook for 5 minutes and switch off the stove.

Jeera Rice with out onion

Ingredients:
Basmathi rice 2 cups
Water           3 cups
Green Chillies 3
Jeera or Cumin seeds 1 table spoon
Bayleaf  3
Cloves 2
Cinnamon 1 inch piece (break it into 3 to 4 pieces)
Oil     1 and 1/2 table spoons
Salt as needed 


Preparation:
1. Wash and soak rice in water for one hour or at least half an hour.
2. Cut green chillies into length wise pieces.
3. Heat a pan and add oil after the oil is heated add the cloves, bay leaf ,cinnamon stick and cumin seeds. When the cumin seeds slightly  change color switch off the stove.
4. Drain the water from the soaked rice. 
5.  In a cooker or rice cooker add the rice, water, cloves ,bay leaf, cinnamon stick, cumin seeds with oil , green chillies and salt .


NOTE: For basmathi rice we generally use 1 and1/2 cup for 1 cup rice . Adjust accordingly .

Tomato Rice - Variety 1

Ingredients:
Basamati Rice 1 cup
Tomato   3 big sized
Onion 1 big sized
Ginger 1 inch piece
Green Chilli  4 
Chana Dal 1 teaspoon
Urad dal  1 teaspoon
Mustard seeds  1/2 teaspoon
Jeera 1/2 teaspoon
Hing 2 piches
Cashews 2 teaspoons
Red Chilli    2 
Red Chilli powder  1/2 teaspoon
Garam masala       1/4 teaspoon
Curry leaves       8 to 10
Oil                5 teaspoons
Coriander Leaves


Preparation:
1. Cook the rice by adding 2 cups of water. Spread the cooked rice in a bowl.  Cut tomato, ginger and Onion into snall pieces. Cut green chilli length wise.
2. Heat a pan after oil is heated add oil to it when oil is hot add chana dal ,urad dal and fry ,mustard seeds, jeera , red chilli cut into 3 pieces , hing, curry leaves, green chilli and ginger pieces.
3. After the dal turn to golden color add the onion pieces to it after the onions become soft. 
4. Add tomato pieces and mix well and cook till the tomatoes become soft.
5. Add salt,red chilli powder and garam masala and mix well.
6. Add this to the rice in the bowl and mix well. Garnish with coriander leaves or cilantro.


Vegetable Biriyani- Variety 1

Ingredients:
Basmati rice 2 cups
Mixed vegetables 1 and 1/2 cups
(In US you get all the cut vegetables in frozen section )
(carrots, beans , corn, green peas)
Potatoes 2
Onions 3
Garlic 4 pods
Ginger 2 inch piece
(Ginger garlic paste 1 table spoon or 3 teaspoons)
Red chilli powder 1 teaspoon (adjust accordingly)
Garam masala 1 teaspoon
Coriander powder 1 teaspoon
Bay leaves 6
Tumeric 1/4 teaspoon
Oil 1 cup
Salt as needed


Preparation:
1. Heat a pan and add 1 teaspoon of oil and and fry the rice. After 5 minutes remove the rice and wash it. Soak it water for about 15 minutes. Drain the water.



2. Cut onions into small pieces . Cut potatoes into even sized cubes. Make a paste of ginger and garlic.  Heat a pan add oil and add the onion pieces , ginger and garlic paste , bay leaves and mix well.





3. After the onions turn translucent add the mixed vegetables after 2 minutes add garam masala, red chilli powder, tumeric powder and coriander powder and mix well. Cook for about 2 minutes.

4. Transfer the rice to a rice cooker or cooker add 4 cups of water, vegetables to the cooker add the potato pieces and salt and cooked until the rice is fully cooked.





Pulihora or Tamarind Rice - Variety 1

Ingredients:
Rice 2 cups or
Cooked rice 4 cups
Tamarind juice 1 cup
Green Chillies 4
Ginger 2 inch piece
Chana Dal(Senaga pappu) 2 teaspoons
Urad Dal(Mena pappu ) 2 teaspoons
Mustard seeds 1 teaspoon
Curry leaves 8-10
Peanuts 2 teaspoons
(also called pallilu/veru senagapappu)
Turmeric 1/4 teaspoon
Hing 2 pinches
Cashews 1 teaspoon (optional)
Oil 1 cup
Salt as needed

Preparation:
1. Take 2 cup of rice and cook it by adding 4 cups of water. Spread the cooked rice a big bowl.
2. Soak tamarind in hot water and make a paste of it and extract the juice.


3. Cut green chilli into length wise .Cut ginger into very small pieces.
4. Heat a pan and add oil after oil is heated turn to medium low flame  add chana dal, urad dal, mustard seeds, ground nuts / peanuts, turmeric, hing ,curry leaves, green chillies and ginger fry till the urad dal becomes into golden color .


5. Add tumeric powder and salt , mix well. Add tamarind juice and after it boils switch off stove.




6. Mix the above tadka into the cooked rice in the bowl and mix well.


Cocunut Rice -Variety 1

There are different ways to making coconut rice but my mom makes from fresh coconut, my friend uses coconut milk and water to cook the rice.





Ingredients:
Rice 2 cup or
Cooked rice 4 cups
Cocunut milk 1 cup
Dry coconut powder 1 cup
Green Chillies 4
Ginger 2 inch piece
Chana Dal(Senaga pappu) 2 teaspoons
Urad Dal(Mena pappu ) 2 teaspoons
Mustard seeds 1 teaspoon
Curry leaves 8-10
Cashews 1 teaspoon (optional)
Oil 3 teaspoons or 1 tablespoon
Salt as needed

Preparation:
1. Take 2 cups of rice and cook  in cooker  by adding 4 cups of water. Cut green chilli into long pieces .Cut ginger into very small pieces.





2. Heat a pan and add oil add chana dal, urad dal, mustard seeds, coconut powder,cashew, hing ,curry leaves, green chillies and ginger  fry till the cocunut becomes into golden color . Switch off the stove.







3. Add salt and mix well. Mix the above tadka into the cooked rice in the bowl and mix well. I have used a big pan so mixed it in the pan.





4. Add coconut milk and mix well.
