Sev raita or Sana poosa raita

Ingredients:
Curd 3 cups
Chat masala 1½  teaspooon
(Adjust as your taste)
Sev or sannapoosa 1½  cup
Pepper ½  teaspooon
(adjust accordingly)
Salt very little
(if required as sev and chat masala have salt in it)
Coriander leaves for garnishing

Preparation:
1. In a bowl add curd, add chat masala and pepper. Mix well.
2. Add sev and mix well.
3. Garnish with coriander leaves.

Tomato Raita

Ingredients:
Tomatoes 2
Yogurt or curd 1 cup
Ghee 1/2 teaspoon
Mustard seeds 1 teaspoon
Green chillies 2
Salt and pepper to taste

Preparation:
1. Cut tomatoes into one centimeter cubes. Cut green chillies into very small pieces.
2. Lightly beat yogurt and little water if it full fat yogurt.
3. Add tomato pieces,green chillies to the yogurt , add salt and pepper. Mix well.
4. Heat a pan put half teaspoon of ghee in a pan and mustard seeds after the seeds splutter garnish this to raita.
Note : You can also garnish it with chopped cilantro leaves

Radish Raita

Ingredients:
White radish 1/2 cup
Thick Yogurt or curd 1 cup
Water 1/2 cup
Green chilli 2
Coriander leaves finely chopped
Salt as needed


Preparation:
1. Beat yogurt and water in a mixie. Transfer it into a bowl.
2. Chop radish into very small pieces. Add to the yogurt bowl.
3. Cut green chillis into very small pieces and add to the yogurt bowl.
4. Add salt and mix well and garnish with coriander leaves.

Boondi Raita

Ingredients:
Yogurt or curd 1 cup
Water 1 /2cup
Plain boondi 1/2 cup
Red chilli powder 1/4 teaspoon
Chat masala powder 1/2 teaspoon
Coriander leaves handful (optional)


Preparation:
1. Mix yogurt or curd with water and blend it for 2 minutes .Add boondi to it.



2. Add salt, masala powder and chili powder. Mix well.


Finely chop coriander leaves and garnish the raita. If you want it chill then refrigirate it.

Onion Raita

Ingredients:
Yogurt or curd 2 cups
Water 1 cup
Onion  1 big sized
Green Chillies  2
(adjust accordingly)
Cilantro leaves or coriander leaves 1/2 cup
Salt to taste

Preparation:
1. Cut Onions and green chilli into small pieces and put them in a bowl.


2. In a mixie or using a beater add yogurt and water and make it  into buttermilk.


3. Add the yogurt or curd mixture to the bowl with onions and green chillies. Add salt and  mix well. Garnish with cilantro or coriander leaves. This a great dish and quick side dish for biriyani.
Note:
If you have food processor put onion, chillies and cilantro, pulse it and add yogurt and mix it. Add salt according to your taste.
